Swordfish with walnuts
Ingredients for 4:
- 800 g swordfish steaks
- 60 g walnuts, peeled
- 1 small white onion
- 40 ml marsala or sweet white wine
- 2 tablespoons lemon zest
- 2 sprigs of parsley
- a pinch of saffron
- 50 g white flour (or corn)
- extra virgin olive oil
- salt and pepper to taste

Preparation
Mince the onions and sauté them for a minute in a deep pan in a tablespoon and a half of hot extra virgin olive oil. Add the walnuts one by one (saving a few for the garnish), the saffron and the lemon zest, then add the marsala and let the alcohol evaporate.
Coat the swordfish well in flour, then lay the slices in the pan along with another tablespoon of oil. Cover and cook for about ten minutes, turning the steaks over halfway and adding more marsala.
Serve the swordfish steaks covered in chopped parsley and walnuts.
