Stuffed sardines

Ingredients for 4:

  • 600 g fresh sardines
  • 100 g bread crumbs
  • 10 g garlic
  • capers
  • extra virgin olive oil
  • parsley
  • a pinch of salt and pepper

Preparation time: 40 minutes

Preparation
Clean the sardines, keeping the filets attached along the spine. In a bowl, prepare a mixture of bread crumbs, minced garlic and parsley, chopped capers and a pinch of salt and pepper.
Stuff the sardine filets with the mixture, fold them and hold them closed with a toothpick. Lay them in a greased pan, sprinkle them with bread crumbs and place the pan in the oven at medium heat for half an hour.
