Salmon with Annurche apples and red cabbage
Ingredients for 4:
- 200 g salmon filet
- 1 red cabbage
- 1 Annurca apple
- 20 g extra virgin olive oil
- turmeric to taste
- a pinch of salt
Preparation time: 1 hour
First wash the apples, dry them and cut them in half, remove the core, slice them and cut each slice into three triangles. Lay the salmon filets in a casserole lined with baking paper and cover them with the apple triangles.
In a bowl, mix a pinch of salt and some turmeric (a quarter teaspoon is enough), then sprinkle it over the filets. Cook for 20 minutes at 425° F (220° C) in a preheated, non-ventilated oven.
Meanwhile, wash, slice and salt the red cabbage, soak it for 10 minutes and rinse under running water. When the salmon is done, serve it on a bed of red cabbage seasoned with salt and pepper.
