Poached sea robin

Ingredients for 4:

  • 1 kg sea robin
  • 500 g cherry tomatoes
  • 2 cloves garlic
  • 1 bunch parsley
  • white wine to taste
  • extra virgin olive oil
  • a pinch of salt

Preparation
Clean the fish: remove the head, tail, skin and guts until you are left with two filets (or have your fishmonger do it); rinse and dry them.
Heat up a few tablespoons of extra virgin olive oil in a skillet, add the garlic cloves and cook until they turn golden. Add the previously cleaned and diced tomatoes and a pinch of salt and douse the pan with a dash of white wine and a glass of water.
Simmer the sauce until it is boiling, then add the sea robin filets and cook for another 10 minutes. Garnish with chopped parsley before serving.
