Poached filet of sea bass with chopped herbs and potatoes
Ingredients for 4:
- 4 filets of sea bass
- 400 g potatoes
- thyme, tarragon and other herbs to taste
- extra virgin olive oil
- a pinch of salt
Preparation time: 20 minutes
Lay the filet of sea bass on a baking paper lined with baking paper and sprinkle a mixture of chopped thyme, tarragon and other herbs, a drizzle of oil and the potatoes, cut into thin slices using a vegetable mandoline.
Sprinkle with salt and close the paper over the filet, sealing the edges with care, then place it in the oven, preheated to 400° F (220° C), for about twenty minutes.
