
Flounder and green bean rolls
Ingredients for 4:
- 250 g fresh skinless flounder filets (6)
- 200 g fresh green beans
- dry white wine
- salt
- pepper
For the sauce:
- 2 tomatoes
- shallot (or onion)
- basil leaves
- ginger
- extra virgin olive oil
- salt
- pepper

Preparation
Wash and trim the green beans and boil them in salted water for a few minutes. Drain while they are still crunchy and divide them into 6 equal bunches, then place each one on a flounder filet.
Season with salt and pepper to taste, roll up the filets and place them in a greased pan. Pour half a glass of white wine over the filets, cover the pan with aluminum foil to prevent the filets from drying out and bake at 400° F (200°C) for 10 minutes.
In the meantime, prepare the sauce: finely chop the shallot and sauté it in a tablespoon of extra virgin olive oil and half a tablespoon of grated ginger. Add the tomatoes, cut into cubes and seeded, season with salt and pepper and cook for about 15 minutes, adding a few basil leaves for flavor.
When it is ready, pour the sauce into a blender along with a handful of ice cubes and blend. Remove the flounder filet rolls from the oven and let cool, then slice and serve cold, with the tomato sauce over them.
