Chicken salad with Annurche apples

Ingredients for 4:

  • 700 g sliced chicken breast
  • 3 Annurche apples
  • 70 g baby spinach
  • 70 g rucola (rocket salad)
  • 1 pomegranate
  • 20 g extra virgin olive oil
  • 10 g cider vinegar
  • pepper to taste
  • a pinch of salt

Preparation
Start by placing the chicken in a casserole and dressing it with oil, salt and pepper, working the marinade well into the meat with your hands. Put them aside for a few minutes while you wash and dry the rucola and the baby spinach. Seed the pomegranate and put the seeds aside in a bowl.
Now heat a cast iron grill and, when it is quite hot, spread the slices of chicken on it, brushing on some of the leftover marinade from time to time. Turn after 4-5 minutes and grill for another 4-5 minutes.
In a large bowl, make the salad, mixing together the unpeeled apples, cut into thin slices, the julienned chicken breast, the baby spinach, rucola and pomegranate seeds. Prepare an emulsion of olive oil, cider vinegar, salt and pepper to use as a dressing.
