Annurche apple mousse

Ingredients:

  • 1 kg Annurche apples
  • 80 ml water
  • 1 cinnamon stick
  • 1 vanilla bean
  • 2 tbsp sugar
  • Juice of half a lemon

Preparation time: 15 minutes

Preparation
Fill a pot with water and add the sugar, the vanilla bean and the cinnamon stick. Cook at high heat for a few minutes.
Peel the apples, cut them into pieces and add them to the pot along with the lemon juice, then continue cooking at low heat for about 15-20 minutes more.
At this point, remove the cinnamon and the vanilla and purée the contents of the pot using an immersion hand blender. Blend until you have obtained a smooth mousse without lumps.
