Annurche apple cake
- 300 g all-purpose flour
- 1 whole egg and 2 egg whites
- 100 g granulated sugar
- 100 ml vegetable oil (mixed seeds)
- 2 125 g cups of low-fat yogurt
- 3 Annurche apples
- 1 packet of dry yeast
- zest of 1 lemon
Preparation time: 50 minutes
Peel the apples, cut them into chunks and roll them in the flour. Whip the egg whites with the sugar and the lemon zest, using an electric hand mixer, then add the yogurt, the oil and, at the end, the previously sieved flour and yeast, followed by the chunks of apple.
Butter and lightly flour a round, 24 cm baking pan: pour in the mixture and bake in a preheated 350° F (180° C) oven for about 30 minutes.
When it is done, let the cake cool and decorate the top with thin slices of apple and a light dusting of confectioner’s sugar.
